Chinese communities have cooked in Puerto Rico for generations, and out of those kitchens came a distinct style: Cantonese technique — the wok, the fried rice, the sauces — adapted to island ingredients and Puerto Rican taste. On the island, restaurants like these are a beloved everyday staple.
A classic order pairs a wok dish or fried rice with sides you'd expect from a Puerto Rican kitchen. It's comfort food twice over — familiar to anyone who grew up with Chinese takeout, and familiar to anyone who grew up with sazón.
